Ultimate Bircher Muesli


The original overnight oats! This classic bircher muesli recipe is just the right balance of flavours and textures with juicy apple, crunchy nuts and seeds and creamy oats and yoghurt. It makes the perfect breakfast on a slow weekend morning or is just as good prepared in advance to take with you to work on those mornings when you are short on time. Top the muesli with fresh berries, berry compote or Mixed Berry Chia Jam and you have a delicious, healthy and nourishing start to your day.

Ingredients (serves 1)

  • 1 small or 1/2 large apple, grated

  • 1/2 cup rolled oats (GF if necessary)

  • 2 tbsps dried fruit of choice (sultanas, raisins, cranberries, blueberries, chopped apricots etc)

  • 1 tbsp sunflower seeds

  • 1 tbsp pumpkin seeds

  • 1/4 tsp ground cinnamon

  • 1/4 cup yoghurt of choice

  • 3 tbsps milk of choice

  • handful of walnuts or hazelnuts, toasted and roughly chopped

  • fresh berries, berry compote or Mixed Berry Chia Jam

Directions

To a bowl add the grated apple, rolled oats, dried fruit, seeds and cinnamon. Spoon in the yogurt and milk and then mix to combine. Leave to sit overnight or at least 30 minutes. Top with the toasted nuts and fresh berries, berry compote or Mixed Berry Chia Jam.
