Creamy Buckwheat Pudding


A new favourite among family and friends, this creamy buckwheat pudding is a winner for adults and children alike…it is actually one of my 9 months old’s favourite breakfasts! Soak the buckwheat groats overnight and then all you have to do in the morning is throw all the ingredients in the blender. Make a big batch for the whole family and then each person can add their own toppings.

Tip - Freeze ripe avocadoes by cutting in half, removing the stone and scooping out the flesh. Put in a container and store in the freezer. The frozen avocado will add healthy fats and a creamy consistency to smoothies etc.

Ingredients (serves 2)

  • 1/2 cup buckwheat groats, soaked overnight

  • 1/4 cup yoghurt of choice

  • 1/4 cup milk of choice

  • 1/2 a frozen avocado

  • 1/2 a fresh mango

  • 2 small dates or 1 medjool date

  • 1 tbsp ground flaxseed

  • 2 tbsps tahini

  • 1/2 tsp ground cinnamon

Directions

The night before, add buckwheat to a bowl, cover with water and soak overnight. In the morning drain and rinse the buckwheat well then add to a blender with the remaining ingredients and blend until smooth. Serve topped with fresh or frozen berries, toasted coconut flakes and fresh mint.
