Avocado and Pea Smash with Lemon Mint and Wild Garlic Flowers


This is a fantastic quick and healthy breakfast or lunch for the warmer months. Full of healthy monounsaturated fats, good amounts of protein and gut friendly sourdough. Whilst the lemon mint and garlic flowers aren’t crucial to this dish, if you have some herbs in the garden and have wild garlic growing locally then I urge you to try it because it really takes it to the next level!

Ingredients (serves 1)

  • 1/2 large or 1 small avocado

  • 1/4 cup garden peas (thawed if using frozen)

  • 1/2 tsp granulated garlic

  • a few fresh lemon mint or regular mint leaves

  • a handful of wild garlic flowers

  • 1 slice of sourdough bread toasted

  • extra virgin olive oil

Directions

Mash the avocado with a fork according to your preference. Add the peas and mash slightly so they still retain some texture. Add the garlic granules and mix to incorporate. If using, tear the lemon mint or mint leaves into small pieces and add to the avocado mix.

Drizzle the sourdough toast with some extra virgin olive oil and then top with the avocado mixture. Scatter the wild garlic flowers on top and sprinkle with some sea salt and cracked black pepper. Enjoy!
