Easy Mixed Berry Chia Jam
An incredibly simple chia jam recipe to replace the refined sugar laden jams from the supermarket! Spend a few minutes each week or fortnight making this delicious jam and feel good knowing that you and your kids are consuming a nutritious jam full of antioxidants, fibre and essential fatty acids.
Ingredients
300g bag of mixed frozen berries
2 tbsp water
1 tbsp maple syrup, honey or coconut nectar
2 tbsp chia seeds
Directions
Add frozen berries to a pan and heat until simmering. Turn down the heat and simmer gently for around 5 minutes or until soft and starting to break down. Turn off the heat and muddle with a wooden spoon to crush the berries a bit. Add maple syrup and chia seeds and stir to ensure chia seeds are evenly distributed. Leave in the pan to cool and then transfer to a jar and store in the fridge for 5 days or more. Enjoy on toasted sourdough or on top of porridge or yoghurt.
