Healthy Peanut Butter and Jelly Porridge


A delicious breakfast that the whole family will enjoy! A healthy spin on the classic ‘PB&J’ with all natural peanut butter, homemade mixed berry chia jam and caramelised banana.

Ingredients (serves 1)

  • 1/2 cup rolled oats (GF if necessary)

  • 1 cup water or milk of choice

  • 1 tsp chia seeds

  • 1 tsp maple syrup, honey or coconut nectar

  • 1 tbsp peanut butter (100% nuts)

  • 1 tbsp mixed berry chia jam

  • 1 tsp coconut oil

  • 1 small or 1/2 large banana, sliced

Directions

Add the oats, water/milk and chia seeds to a pan. Heat until bubbling and then lower the heat and gently simmer, stirring occasionally until thick and creamy (5-10 minutes). Whilst the porridge is cooking, melt the coconut oil in a frying pan. Once hot add the sliced banana and cook until slightly browned and caramelised. Flip the slices over and cook for a further few minutes on the other side. Remove the porridge from the heat and stir in the maple syrup. Pour into a bowl and top with the peanut butter, chia jam and caramelised banana.
