Mango, Coconut and Lime Overnight Oats
Mango, coconut and lime are a heavenly combination in my books and this breakfast will transport you to a beach in the tropics! The recipe is family friendly and can be made the night before or in the morning. Enjoy!
Ingredients (serves 1)
1/2 a fresh mango, cubed
1/2 cup rolled oats (GF if necessary)
1 tbsp ground flaxseed (optional)
1/4 cup coconut yoghurt
1/4 cup milk
zest and juice of half a lime
handful of coconut flakes, toasted
handful of hazelnuts, toasted
Directions
Zest the lime and set aside for later. To a bowl, add the cubed mago, rolled oats, ground flaxseed, yoghurt and milk. Stir to combine and then leave for at least 30 minutes or overnight. When ready to eat, top with the coconut flakes, hazelnuts and lime zest.
