Raw Buckwheat Pudding


A great summer breakfast for the whole family! Use this recipe as a guide and then mix it up by using different fruits and spices. Leftovers can be stored in a jar in the fridge for a few days.

Ingredients (serves 2)

  • 1 cup buckwheat groats

  • 1 banana

  • 1/2 cup apple puree

  • 1 tbsp chia seeds

  • 1/2 tsp ground cinnamon

  • 1/2 cup milk of choice

  • Fresh or frozen blueberries for serving

Directions

The night before, add buckwheat to a bowl, cover with water and soak overnight. In the morning drain and rinse the buckwheat well then add to a blender with the remaining ingredient (except blueberries). Blend until smooth, adding more milk if necessary. Serve in jars, layered with the blueberries.

This recipe can be used with various different fruits - try mango, raspberries, strawberries or peaches.
