The BEST Vegan and Sugar Free Banana Bread
Banana bread is such a great way to use up ripe bananas - it’s healthy, delicious and makes a great snack for busy mums and energetic kids. This recipe is vegan, contains no added sugar or oil and is really simple to make. Enjoy this banana bread as a snack or for breakfast, toasted with some almond butter spread on top.
Ingredients
4 large bananas, mashed + 1 large banana, sliced
125ml / 1/2 cup water
290g wholemeal spelt flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon powder
1/4 tsp sea salt
60g / 1/2 cup raisins or sultanas
40g / 1/3 cup walnuts, roughly chopped
Directions
Preheat oven to 180 Celsius / 160 Celsius fan. Grease a 1lb loaf tin. Add flour, baking powder, baking soda, cinnamon and salt to a large bowl and stir to combine. Add in the mashed bananas and water and mix until you have an even mixture. Next, mix in the raisins or sultanas, walnuts and sliced banana. Transfer the mixture to the greased tin and bake in the oven for 25 minutes, then turn the tin around and bake for another 15 minutes. Enjoy!
