Apple and Blueberry Buckwheat Bowl
For those who love bircher or overnight oats, this is a lovely variation on that using buckwheat groats instead of oats. Crisp apple, chewy buckwheat and juicy blueberries make this a delicious breakfast fpr the warmer months.
Ingredients (serves 1)
1/4 cup buckwheat groats
handful of almonds
1 small red apple, finely diced
1/2 cup fresh or frozen and thawed blueberries
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/2 cup yogurt of choice
Directions
The night before, add buckwheat and almonds to a bowl, cover with water and soak overnight. In the morning drain and rinse the buckwheat and almonds and place in a clean bowl. Add remaining ingredients and stir to combine. Leave for a few minutes for the flavours to incorporate and then serve topped with toasted sunflower and pumpkin seeds, shredded coconut and more apple if you like.
